In the Ozarks, vegetables can be grown throughout the winter. You can have cabbage, broccoli, kale, spinach, and more all year. Planting your vegetables, or starting seeds indoors, in September will help the plants get large before the daylight becomes too short for it to put on new growth. Also, some vegetables can also be started indoors and put in the ground during the February or the early spring months. In winter there is little need for watering and hardly any pests to attack your plants. All you will need is some extra protection, like frost cloth, for cold spells. At the garden, you can see that we use a simple frost cloth, pinned to curved pipes. There are a variety of ways to cover your plants, including green houses, cold frames, and more.
